Letty is a thermal shock washed Geisha from Diego Bermudez of Finca El Paraiso in Cauca, Colombia. Diego ferments in bioreactors instead of open tanks, tracking time, temperature, pH, brix, and microbial load through the whole process, and the control shows: this lot took a gold medal at the Global Coffee Awards in the Experimental Process Filter category.
Hot, it leads with juicy peach and yellow fruit. As the cup cools it turns delicate — the florals come forward and the creamy body slides into something closer to oolong. Two cups from the same brew.
