SSP's High Uniformity burrs in 83 mm, the espresso-first upgrade. Uniform particles extract evenly, which shows up as syrupy body and balance instead of the muddier cup stock burrs give.
Best with medium and dark roasts, happy with light ones, and they cover pour-over duty despite the espresso intent. Tool steel with a Red Speed coating rated for roughly 10,000 pounds of coffee.
