Floral and berry-sweet with a spicy edge and a sugarcane finish: a light-roast Bourbon Aji from El Mirador, a three-hectare farm at 1,400 meters in Palestina, Huila.

Jefferson Adrián Imbachi Samboní farms coffee the way his parents and grandparents did, updated with soil biology and regenerative practice. This washed lot gets 36 hours of cherry oxidation and 70 hours of submerged fermentation before a slow traditional dry, which is where the aromatics come from. The 4 oz size exists because rare lots deserve a low-commitment first taste.
