The espresso machine cleaner. Cafiza is the backflush powder behind most café closing routines: loaded into a blind basket, it strips coffee oils from the group head, shower screen, and valves.
After the final rinse, pull a shot and dump it. That seasoning shot flushes any last trace of cleaner and coats the group in fresh coffee oils again.
