A 600 ml variable-temperature gooseneck built for pour-over. Set any temperature from 40 to 100°C in 1° steps, watch actual and target side by side on the dual display, and leave HOLD mode to keep the water there while you grind and bloom.
The 600 ml capacity is the honest trade: it heats fast (88°C in under four minutes at 1000 W) and pours with precision, but you will refill it for back-to-back brews or a full carafe.
