Spark - Mexico
Tamarind, cashew, milk chocolate.
A washed light roast from El Cielo, a small family farm in the highlands of Villa Corzo, Chiapas. Doña Duglas Molina started growing coffee in 2016 and runs the farm with her husband Eddy and their family. She picks alongside the crew. Cherries are depulped, fermented 24 to 36 hours, washed, then sun dried and turned by hand.
Duglas is part of Café Delas, a Covoya program that gives women producers training, technical support and a premium on top of the sale price. The cup is clean and sweet, with tamarind up front and milk chocolate underneath.
