
Mexico Sierra Madre
Citrus, brown sugar, and a little ginger warmth on the finish. Washed coffee from smallholder farms high in the Sierra Madre de Chiapas, near the Guatemalan border, roasted light.
The farms around Siltepec are often smaller than two hectares, and the cherries are pulped, fermented, washed, and dried at home on roofs and patios. Bourbon, Caturra, Catuai, and Typica grown between 1,200 and 1,900 meters. A clean, gentle filter coffee that works as a first light roast for someone who has only had medium.
