Korgua Estate - Papua New Guinea
Strawberry wine, cacao nibs, cinnamon tea.
An anaerobic natural from Korgua Estate in the Chuave district of Papua New Guinea. Around 40 smallholders grow on steep hillsides between 1,600 and 1,800 meters and sell through Sirigine Coffee Producers, founded by Paul Sirigine after 20 years of farming to connect local growers with specialty buyers. Most of the work is by hand.
Cherries ferment in sealed tanks, then dry on patios and tarps. The process pushes fruit forward without muddying the cup. Light roast, juicy, with a smooth finish.
