Honduras Finca Quebrada Onda
Dried fruit, cocoa, and a mascarpone-like richness. A honey process lot from Finca Quebrada Onda, a family farm in the Montecillos mountains of La Paz, Honduras.
The farm passed from father to son. Isaac Mejía, an engineer by training, runs it now, and the tighter management shows up as a cleaner, sweeter cup than most Honduran coffees. Honey processing leaves some of the fruit on the bean while it dries, which is where the intense sweetness and heavy mouthfeel come from. The acidity is gentle, more of a citrus finish than a bright one.
Good as pour-over or drip. It also pulls a syrupy espresso.
