Guatemala Guaya'b
Syrupy chocolate with complex stone fruit riding over it. This year's harvest brews beautifully as filter and makes surprisingly good espresso.
Guaya'b means "mutual support" in Popti', and nearly all 600 members of the 26-year-old cooperative behind it are of Maya descent. The coffee grows under lush shade canopies that double as habitat for native and migratory birds, which is what earns the Smithsonian Bird Friendly certification alongside Organic and Fairtrade.
