Honey, milk chocolate, and an easygoing sweetness. A yellow honey process coffee from the Cerro San Luis micromill in Costa Rica's West Valley, where one family grows, mills, and dries its own coffee at home.

Yellow honey means the beans are pulped and dried with a thin layer of fruit still on them, turned on patios over days and weeks. The result sits between a washed and a natural: more body and sweetness than a washed Costa Rica, none of the funk of a natural. It is a gentle, approachable cup, which also means it is not the one to buy if you want fireworks.

Drip or pour-over. It is the Costa Rica in this lineup that also works with a splash of milk.
