The short answer: scale comes from your water, not from a calendar. If your machine drinks soft or properly mixed water, it may never build enough scale to matter. If it drinks hard tap water, descale on the maker's schedule. Check your water first. That one fact decides everything else.
Descaling advice usually arrives as a rule: every month, every three months, every 90 tanks. The rule skips the only question that matters, which is how much scale your water can make. This is our Second Look at the claim that every espresso machine needs regular descaling.
Where does scale come from?
Scale is calcium carbonate, the same white crust that shows up in kettles. Tap water carries dissolved calcium and magnesium (that's hardness) plus bicarbonate (that's alkalinity, the water's acid buffer). Heat the water and the dissolved calcium drops out of solution as solid carbonate. It grabs the hottest surfaces first: heating elements, boiler walls, and the narrow passages that feed your group.
How much scale you get is a direct function of what's dissolved in the tank. Water carrying 150 ppm of hardness builds crust several times faster than water at 40 ppm, and water with almost no hardness builds almost none. A fixed descaling schedule fits one of those situations and misses the others by a mile.
Hardness does have an upside, though, which is why you can't chase zero minerals. In 2014, chemist Christopher Hendon and baristas Maxwell and Lesley Colonna-Dashwood, working with the University of Bath, published a paper in the Journal of Agricultural and Food Chemistry showing that dissolved cations like magnesium help pull flavor compounds out of the grounds. Can descaling hurt your machine?
It can, and the bottle instructions leave this part out. A long-running Home-Barista thread, To Descale or Not To Descale, collects years of owner experience, and two risks come up over and over.
First, descaler rarely removes scale in one clean dissolve. It loosens flakes, and flakes travel. They lodge in valves, in level probes, and in the gicleur, the tiny flow restrictor that feeds your group. Owners in that thread describe machines that ran fine before a descale and limped out of it. Second, acid has no idea when the scale is gone. Given repeated soaks it starts working on nickel plating, brass, and rubber seals.
None of that makes descaling bad. It makes descaling closer to a repair than to routine maintenance, and the community consensus lands where we do: prevention beats treatment. Feed the machine water that can't form much scale and you may never open the bottle. How do you find out if your water makes scale?
Three ways, from free to about ten dollars:
- Read your utility's water report. Search your city plus "water quality report" and find hardness, listed in ppm or mg/L as CaCO3 (same unit, two names). If it's in grains per gallon, multiply by 17.1.
- Look at your kettle. White crust inside within a month or two means your espresso machine is growing the same crust where you can't see it.
- Test it. Aquarium GH/KH test strips or a drop kit cost about ten dollars and answer the question in a minute.
Rough bands to steer by, and these are our working numbers rather than gospel, since alkalinity and boiler temperature shift them: under about 50 ppm hardness, scale forms so slowly that years can pass before it matters. Between 50 and 100 ppm, scale builds steadily, so fix the water or accept a descaling routine. Above 100 ppm, tap water can coat a boiler within months, and treating the water stops being optional.
What should you do instead?
Fix the tank, once. For a machine with a reservoir, that means brewing with water mixed for espresso machines: low hardness, modest alkalinity, enough minerals to taste like coffee instead of cardboard. Options run from mineral packets stirred into distilled water to bottled brands that happen to sit in the safe zone. One clarification while we're here, because owners mix up the two jobs: descaling removes minerals from the water side of the machine. Backflushing with detergent removes coffee oils from the brew side. Doing one does nothing about the other. Our cleaning schedule covers which job happens when.
When is descaling clearly the right call?
Plenty of situations. This piece argues for checking, and sometimes the check says yes.
- Your manual says descale and you brew with tap water. Breville, De'Longhi, and Gaggia wrote those routines for their own boilers, and those machines are built to be descaled by their owners. Follow the manual without guilt. A machine descaled on schedule outlives a neglected one every time.
- You bought the machine used and don't know its history. One caveat: if flow is already restricted, a heavy scale load plus descaler can shed chunks exactly where you don't want them. For a prosumer machine with a mystery past, a bench service is money well spent.
- The symptoms are stacking up. Slower flow from the group, weaker steam, temperature swings, a louder pump, and a water report that says hard. That combination is scale until proven otherwise.
FAQ
How often should I descale a Breville or De'Longhi?
Follow the manual, which lands between 60 and 90 days on unfiltered tap water for most models. Many of these machines let you set your water hardness so the reminder matches reality. Run low-mineral water in the tank and the honest interval stretches to years.
Does vinegar work as a descaler?
It dissolves scale, slowly, and the smell haunts seals and tubing for a long time. Citric acid or the manufacturer's product costs a few dollars and rinses clean. On prosumer machines with copper boilers and nickel plating, skip DIY acids entirely unless the builder blesses them.
Does scale change how the coffee tastes?
Indirectly, and by the time you taste it the machine has been suffering for a while. Scale insulates the heating element and narrows passages, so temperature and flow drift, and extraction drifts with them. The high-alkalinity water that builds scale also flattens acidity in the cup long before crust forms, which our water guide explains.
Can I just use distilled water and skip all of this?
Tempting, and we'd steer you away. Zero-mineral water extracts poorly, which is the flavor half of the Bath study above, and some machines' electronic fill probes need a little conductivity to even register water in the boiler. A small dose of the right minerals costs pennies per tank and solves both problems.
