
El Diviso - Thermal Shock Aji Bourbon
Red fruit, passionfruit, jasmine, and an acidity that borders on effervescent.
From Nestor and Adrian Lasso at Finca El Diviso in Huila, Colombia — the brothers whose processing work has made them some of the most watched producers in the country (their Ombligon lot went to the U.S. Barista Championship). Aji Bourbon is a mutation of an Ethiopian landrace, named for the red-pepper aroma of its mucilage; in the cup it reads intensely floral instead.
Expect bright red fruit throughout, jasmine and honeysuckle behind it, a tea-like body, and a floral finish that hangs around. Brew it as filter and let it cool a little before judging it.
