Blackberry, dark chocolate, açaí. A single origin from Byron Arcila in Sonson, Antioquia, grown at 1,800 meters. It combines black honey and washed lots, and the pairing is the point. The honey side brings sweetness and body. The washed side keeps it clear.
Byron is a young producer who spends much of his time teaching other young farmers in Sonson how to grow and process better coffee. That work shows up in the cup. This is juicy, precise, and confident.
It works as pour-over or espresso. As filter, the blackberry leads. As espresso, the chocolate takes over.
