The short answer: extraction is how much of the ground coffee dissolved into your cup; strength is how concentrated the result is. They feel similar and they are not. Grind, time, and temperature control extraction. Your coffee-to-water ratio controls strength. Once you separate the two dials, every recipe on the internet finally makes sense.
You followed the recipe exactly. Same beans as the video, same brewer, same numbers. It still came out different, so you went looking for a better recipe. Here's the thing nobody says plainly: recipes are just positions of two dials, and if you learn the dials you can stop collecting recipes.
What is coffee extraction?
Extraction is the percentage of your ground coffee, by weight, that dissolves into the water. Brew with 20 grams of coffee and dissolve 4 grams of it, and you've extracted 20 percent. The traditional industry target, carried into the Specialty Coffee Association's Golden Cup standard, is 18 to 22 percent, a range first mapped in the 1950s.
Why the range matters: flavors leave the grounds in a rough order. Bright acids and fruit come out early, sugars and caramel sweetness in the middle, harsh drying bitterness last. What is coffee strength?
Strength is concentration: how much dissolved coffee is in the liquid you actually drink, measured as total dissolved solids (TDS). Filter coffee typically lands between 1.15 and 1.35 percent TDS under the SCA's Golden Cup standard. Espresso runs roughly ten times more concentrated. That's the entire difference between them; espresso is not a roast level or a bean type, just strength taken to an extreme.
Two things strength is not: it is not caffeine (a big mug of filter usually out-caffeinates a single shot), and it is not "dark roast flavor." A light roast brewed at 1:14 is strong. A dark roast brewed at 1:18 is weak. Roast is flavor; strength is concentration.
The four corners of a bad cup
Cross the two dials and you get a map. Most disappointing cups live in one of these corners:

What the research actually shows
The UC Davis Coffee Center has spent years testing these variables with trained sensory panels, and three findings are worth carrying to your counter:
- Strength and extraction each change flavor on their own. Sourness, bitterness, sweetness, and body all shift in mappable ways as the two dials move (Frost, Ristenpart & Guinard, Journal of Food Science, 2020).
- Brew temperature barely matters on its own. When researchers held strength and extraction constant, trained tasters could barely tell 87°C coffee from 93°C coffee. Temperature is a means of changing extraction, not an independent flavor knob (Batali, Ristenpart & Guinard, Scientific Reports, 2020).
- There is no single ideal cup. In 2023 the same lab redrew the classic Brewing Control Chart with modern consumer testing and found preferences split into distinct clusters. Some people reliably love what the old chart called "under-developed." The famous ideal box is a starting point, not a verdict (UC Davis Coffee Center, Journal of Food Science, 2023).
How to use the two dials at home
- Set strength with your ratio. Start at 1:16 for filter (60 grams of coffee per liter of water) or 1:2 for espresso. Like it punchier? 1:15. Softer? 1:17. This dial is about you, not correctness.
- Set extraction with your grind. Sour: finer. Bitter: coarser. One step at a time, tasting between changes.
- Leave temperature mostly alone. Water just off the boil for light roasts, a minute off for dark, and per the UC Davis data, stop stressing about it.
- Hold everything else steady. A $15 scale does more for consistency than any upgrade in the store, ours included.

Frequently asked questions
Do I need a refractometer to measure any of this?
No. Refractometers measure TDS and they're great for cafés chasing consistency across staff. At home, your tongue plus a scale covers 95 percent of the value at 2 percent of the price. If the sour/bitter map above makes sense in your mouth, you're already measuring.
Does stronger coffee have more caffeine?
Per ounce, yes; per serving, usually no. A 12-ounce mug of filter coffee generally delivers more total caffeine than a 1-ounce espresso shot. Concentration and dose are different things, which is this whole article in miniature.
What ratio should I start with?
Filter: 1:16, which is 25 grams of coffee to 400 grams of water for a big mug. Espresso: 1:2, like 18 grams in and 36 grams out. Then move it toward your taste and write down where you land.
Why does the same recipe taste different with every new bag?
Because beans differ in density, roast level, and age, which changes how fast they give up their solubles. The recipe didn't break; the coffee changed. Adjust grind first, and expect light roasts to want finer grinds and hotter water than dark roasts.
